Phase 1 of the CMS project was developed within Italian penitentiaries between 2008 and 2012. During October 2008, the first workshop cycle was developed with a group of inmates of Spoleto Maximum Security prison. At this moment, the authors began speculating on the coffee ritual in prison cells and its social values. In 2009, the experience was repeated with another dozen inmates of the same penitentiary. It was at this moment that the idea to make a cookbook was conceived and the material for the first phase began to be collected. |
