Cooking in Maximum Security phase 2 recontextualizes the first experience of Cooking in Maximum Security phase 1 (Italy) in the Spanish context, focusing on Iberian particularities and characteristics. Here inmates have only recently been professionally trained as cooks authorized to prepare meals for the prison community. And though gas and electric stove elements are not permitted in cells, the inmates manage to find ways to express themselves through the kitchen – without heat and using only the few available ingredients. These aspects were elaborated in phase 2 through a cycle of workshops held between August and October 2015 with a group of 12 female inmates of the DONES U section of the BRIANS 1 Catalan Penitentiary. CMS phase 2 is produced with the support of Fundaciò Obra Social La Caixa, with the conceptual support of FoodCultura and with the technical support of Hangar.org.
The authors wish to dedicate this phase to Mai.
